Cocoa Day in Venezuela: What's New?

To celebrate this date, at Puro Chocolate we review the latest news in our country regarding this strategic sector.

Far from standing still, the national cocoa tradition is reinventing itself through science, innovation and tourism, demonstrating why our bean continues to conquer palates and borders.

Science, innovation and technology: from ivory grain to nanotechnology

Scientific research on Theobroma cacao is currently experiencing one of its most dynamic periods. A clear example is the recent milestone in fermentation: a strategic alliance between the UCV's Diploma in Chocolate Science and Technology, Varietales Sur del Lago, and Cacao Shares (Japan) demonstrated that assisted fermentation optimizes the physical structure of the coveted ivory bean and preserves its characteristic color (light break), achieving a biological and photographic record unprecedented in the world's scientific literature.

Alongside these discoveries, the Scientific, Technological, and Innovation Network for Cacao launched fundamental agroecological trials to successfully combat historical pests such as moniliasis, witches' broom, and black pod rot. Meanwhile, the circular economy is gaining ground in the state of Zulia, where researchers are transforming cacao production waste into a sustainable flour ideal for making whole-grain bread.

For its part, Cenidic has been leading targeted pollination processes for more than two decades to consolidate more resistant, productive and high-quality plants, while experts are already making progress in the development of nanosensors aimed at boosting the performance of national plantations.
