Sweet peaches in syrup

• 2 kilos of large, plump and pintones peaches
• 1 and 3/4 of a liter of water
• 1 and 1/4 kilo of sugar
• 1 cinnamon stick (optional)

Peaches are finely peeled. In a thick stainless steel pot, add the water and sugar, as well as the cinnamon stick if it is to your liking. Stir and bring to a boil. Add the peaches, bring to a boil again and cook for 10 minutes over high heat, uncovered. Then the heat is lowered and they are cooked for 80 more minutes, until the drops fall slowly when you put the wooden spoon in the syrup.
As soon as it begins to boil, you must remove it, with a slotted spoon, the foam that forms on the surface. They are left to cool, they are transferred to a glass container and they are put in the refrigerator.
