• 4 egg whites

• 1/8 teaspoon cream of tartar

• 1 1/4 cup sugar

• 1/4 of teaspoon of vanilla essence

The oven is preheated to 100 degrees F. In the bowl of an electric mixer, put the whites and cream of tartar. Beat them to the air point, that is until they form peaks. Always beating, add the sugar slowly and the vanilla essence. Continue beating for about 15 minutes (the walls of the container should be scraped from time to time with a rubber spatula to mix well).

In a metal baking tray, covered with waxed paper, the suspiros are made with the help of a pastry bag with its nozzle. They should be placed separately, as they grow a little in the oven. Bake for an hour, and peel off the paper immediately after being removed from the oven.
