• 1 cup of quinoa
• 3 tablespoons of oil of your choice
• 2 cups of water
• 1 teaspoon salt
• 1/2 cup of zucchini cut into small cubes
• 1/2 cup chives
• 1/2 cup red onion, cut very small
• 1/2 cup of sweet pepper
• 3 tablespoons olive oil
• Salt to taste
The quinoa is washed with plenty of water by placing it in a colander under the tap with plenty of water, stirring with the hands to wash very well.
In a pot or cauldron, pour the oil, heat it over medium heat and add the quinoa, a small stalk of chives and a sweet pepper cut in half. Stir everything until frying and add the water, turn up the heat to the maximum and when the boil bursts, lower the heat, cover and cook until the quinoa doubles in size.
It is removed from the heat, strained and washed again in a colander until cool. It is squeezed well by pressing on the walls of the strainer to remove all the liquid and pour into a container or bowl.
The zucchini, sweet pepper, onion, chives, olive oil and salt are added. Stir well and voila. Optional the juice of one lemon.
