Couscous with vegetables


• 1 cup of couscous

• 1 cup of chicken or meat broth

• 1 small zucchini

• 1 small eggplant

• 1 small paprika

• 1/2 cup broccoli seedlings

• 3 tablespoons of extra virgin olive oil

• 1/2 teaspoon salt


The zucchini, aubergine and paprika are well washed and cut into small cubes; the broccoli trees are passed through hot water. Then everything is sautéed in a pan with the olive oil and salt. Pour into a bowl, preferably glass, the cup of couscous. In a small pot, bring the broth to a boil, pour it over the couscous and cover it immediately with plastic wrap, making sure that there is no air inlet; Leave it for about twelve minutes until the couscous has hydrated. The plastic wrap is removed and stirred with a fork, then we add the sautéed vegetables
