Chicken breast stuffed with spinach and cottage cheese


• 2 chicken breasts
• Steamed spinach leaves
• 1 cup of cottage cheese
• 2 tablespoons of olive oil

• Salt and pepper to taste
The boneless breasts are opened, all the fat is removed and they rest on a cutting board. They are cut in a way to make a kind of pocket, season with salt and pepper to taste, stuffed with the steamed spinach leaves mixed with the cottage cheese and closed with plastic wrap. Then they are steamed for about fifteen minutes, removed from the envoplast, the juice is dried with an absorbent paper or clean kitchen towel and then they are passed through a pan with the very hot olive oil and browned. It will be a delicious dish if you accompany it with sauteed vegetables.
