Breaded courgettes


• 3 medium zucchini

• 2 cups of ground casabe

• Salt and pepper to taste 

• 2 eggs

• Sufficient oil for frying

• 1 lemon (optional)


We wash and cut the zucchini into thick slices. In a container we mix the ground cassava, salt and pepper, and cover the zucchini with it. We beat the eggs with a wire whisk and wet the zucchini one by one. When the zucchini are impregnated with egg, we pass them through the casabe one more time until they are well covered and reserve. Finally, we fry the zucchini until golden brown in a hot pot with enough oil. Remove from the oil, put them on absorbent paper and they will be ready to serve.
