Baked banana with vegetables

INGREDIENTS

• 4 yellow bananas with black spots

• 1 medium onion

• 3 garlic cloves, crushed

• 3 stalks of chives

• 1 medium zucchini

• 1 medium but fat aubergine

• 1 red pepper

• 3 red sweet peppers

• 8 tablespoons of olive oil

• Salt and pepper to taste

PREPARATION

Wash the vegetables well and cut them into mirepoix (cut from medium cubes). In a large frying pan or cauldron we pour the olive oil and, over medium heat, we sauté the vegetables in the following order: onion, garlic, chives, sweet pepper, red paprika, zucchini and eggplant. Cook them for about 10 minutes, stirring occasionally with a wooden spoon. Reserve them until the bananas are cooked, to fill them with this vegetable stir fry.

Wash the bananas with their skin (shell). After washing them well, put them on a baking sheet and put them in the oven to cook them at 350 ° F (177 ° C) for 35 minutes, or until the skin breaks open and the cooked banana tries to come out of its skin. Open the bananas from end to end with a knife, remove the seeds and fill them with the sautéed vegetables.
