Mañoco salad on lettuce


• 1 medium romaine lettuce

• 1 cup of mañoco

• 1 small red onion

• 4 red pear tomatoes without skin and without seeds

• The juice of a large lemon, without seeds

• 4 red sweet peppers

• 1/4 cup coriander leaves

• 3 tablespoons of olive oil

• 1/8 teaspoon of salt


Strip the romaine lettuce and wash its leaves one by one, under the tap. Put them in a pasta strainer in the fridge.

Wash the onion, peel and, on a board, cut it into very small cubes. We will add these to a salad bowl. Wash the tomatoes, remove the skin and seeds, cut them into small cubes and combine them with the onion in the same salad bowl. Wash the coriander leaves, dry them well, cut them into fine julienne strips and add them to the above. Wash the peppers well, remove the seeds, cut them also small and add them to the salad bowl. Stir everything very well and pour in the lemon juice, olive oil and salt.

Finally, we add the mañoco, stir everything well, wait 5 minutes until it hydrates and doubles in size. Taste, correct the salt and, when serving, fill in the romaine lettuce leaves.
